5 Recipes I Am Loving This Fall & Winter Season

I seriously love cooking! And maybe you can’t really relate to that but I think there is something so fun about trying new recipes, flavors and ingredients. I have become so much more creative after cutting out meat and actually laugh a little when people wonder what I eat. There is SO much out there to eat that is not processed, convenient or animal products, you just have to step a little out of your comfort zone to find it. Soon you might even find that including new things is within your new comfort zone!

I do get that we all don’t have hours each day to spend in the kitchen prepping, cooking and cleaning but do think we could all benefit from a little more time in the kitchen rather than going to what’s most convenient. A lot of these recipes even make enough for leftovers the next day, cutting down on the time spent in the kitchen without sacrificing taste or quality.

If you are looking to get re-inspired this season and are curious about what a meatless meal can look or taste like then you are in the right place! I am sharing with you 5 of my favorite recipes this season that I have loved making and a few I have made more than once!

A lot of these I found off Pinterest and one I got from a cookbook I own. Pinterest is seriously my go-to tool when it comes to finding new recipes. And the more you search “healthy vegetarian dinners” the more suggestions you will start getting! Half the time it takes only a few minutes for me to find a new recipe that sounds amazing. You just have to teach it what to show you!

So most of these will have a dinner feel but could easily be great for lunch if you make them the day before. I recommend cooking with a glass of wine or sparkling water and some music or your favorite show going. Create an atmosphere you want to be in and invite your spouse or loved one to help you! Since I work from home, I tend to start cooking by myself before TJ gets there and I really don’t mind. I find its a great way to unwind and helps me checkout from work for a little while!

Y’all this was delish and TJ even finished off the leftovers the next day for dinner! I did add some sun-dried tomatoes to give it more color and texture which I highly recommend you do as well!

I won’t say mine looked near as pretty as hers but dang was it good! The only mix I could find was an orzo and brown rice mix but it still tasted great!

I actually made this salad for Thanksgiving with my family and it was bomb! If you need a side dish to bring to your next holiday activity, I cannot recommend this one enough! There were so many yummy flavors and the dressing was perfect with it!

I don’t make soups often but as soon as the temperature drops I feel like all I want to do is make a crockpot full of soup! At first I felt like I wouldn’t have many meatless soup options outside of a simple veggie soup but I soon found that there were a lot of creative people out there who thought better! This recipe made a ton and I had leftovers for days. The rice makes it heavier so it feels like a more substantial meal!
