Healthy Breakfast Egg Muffins

Good morning beauties! Mornings are one of my favorite parts of the day, especially when I am able to go through my whole routine (affirmations, quiet time, breakfast, meditation). Which sometimes doesn't happen if I have a super early client hah. But one of the things that makes my mornings go smoothly even when I am tight on time is having things pre-made! And one of my favorite things to pre-make are these simple healthy breakfast egg muffins! I love eggs in the mornings but sometimes they take too long to make so just being able to pop these in the microwave is the best!

Now I know in a previous post I discussed the fact that I am a pescatarian (read here) meaning I will still eat fish and some animal bi-products and that includes eggs but no meat. Of course, the products that I do still purchase I want to make sure they align with my philosophy as much as possible. That is why I am so happy I discovered Vital Farms eggs! This is not sponsored I just actually like what they stand for. All of their chickens are pasture-raised chickens with plenty room to roam and forage, they never use pesticide, herbicides or harmful chemicals, they are certified humane (which is what you should always try and look for), antibiotic and hormone free and eat a naturally varied diet. These are awesome markers to look for when purchasing your eggs so if you see Vital Farms pick them up instead! I truly believe we are voting with every barcode scan we make so choosing to vote for a humane, antibiotic and hormone free egg is something I want to stand behind and support. 

(Now off my soap box hehe) Let's talk breakfast.

These are SO simple to make and will last you about a week! You can include any veggies, seasonings or spices you want, I have just included below what I like to use! Hope you enjoy! 


  1. One carton of Vital Farms eggs (12)
  2. 2 tbsp of chives
  3. 1/2 cup of Almond milk (you can use your preferred milk)
  4. 1 cup of chopped spinach
  5. 1/2 cup chopped red onions
  6. 1/2 cup diced tomatoes
  7. Salt & Pepper

(Keep in mind here you can add additional ingredients, ham, mushrooms, cheese and so on! I just like to keep mine light and simple but it is totally up to you!)


  1. Pre-heat oven to 350 degrees
  2. Crack all 12 eggs into a medium bowl and add milk
  3. Chop up veggies and add to bowl of eggs
  4. Spray muffin tin with coconut or olive oil and then pour egg mixture in, filling 1/2-3/4 of the way full (use 1/4 measuring cup to make it simple!) 
  5. Cook for 20-25 minutes
  6. Let cool for 5 minutes and then take out so it doesn't stick to the sides
  7. Enjoy! Top with salsa, Sriracha, avocado, feta, your choice!
